Is there a way to increase speechcraft and security without buying training?
They are only miscellaneous skills for me. Also, how high does athletics have to be
before you can climb up the steeper sides of those ashland hills? I'm using a lot
of spell points on levitate in there but would prefer to just walk.

Security increases when you pick locks. Speechcraft increases when you use the "Persuasion" menu in conversation (Bribe/Taunt/Admire).
