Signatures are Off by default when you submit a post. If you want to display your signature, you'll find a little tickbox in the Additional Option section under the Submit Reply / Preview Post buttons.

No, we turned it off by default as it cuts down on the horrendous amount of signatures that get posted on most forums.
Once per thread is enough, in my opinion.

You could consider creating an option of have it on by default in a person's first post in a thread, and off by default afterwards. Might even reduce the number of signatures showing up, since people would be a bit less likely to develop a habit of checking the "show signature" box for every post (I don't use signatures, but I can see how it could happen - these days I uncheck "Automatically parse links in text" and check "Disable smilies in text" without even realising I'm doing it).

If you can't remember to check one little damn box when you post a message, then your sig probably doesn't contain anything worth reading.
The system is fine as it is now. End of discussion.

One thing I actually like about these boards is the lack of sigs and avatars, feels more organised, and cuts down on the visual trash.

That's what I've done. vBulletin has a nice feature that makes you able, via built-in conditionals, to only display a user's signature in their first post on a thread page. I've even customized it so the members are able to choose from their profile if they want to see signatures in all posts (as some members prefer this) instead of once per thread page (default).
This way everyone is satisfied. :)
