Put simply, I don't "get" what's going on with them.
So I was up in Maar Gan on Thieves Guild business, and decide to pop into the ol' shrine. I actually went there to see about the need for adventurers to defend the town, but alas no one would talk to me about it so I thought i'd have a look around anyway. I talk to this strange daemon-esque guy, and all I have is the option to "taunt" him. Not knowing exactly what was going on, I do so. He attacks me, I kill him. Then I get congratulated by the priest, and told to read the big rock. I do, and get some rather nice skill fortifications. Which was nice. :)
But i'm clueless as to what's actually going on. Seriously, it's some trippy stuff - kill daemons and read rocks to get a better personality? Anyway, it was a pleasant surprise - while it lasted. After a while, I noticed the bonus had gone. I've been experimenting with other "shrines" (some cave near Gnisis, for one), but still have no idea what's going on. I've probably missed something in a book or text, as all I tend to do is scan through them, so would someone care to enlighten me?
All I know is that if you pay some moneys/item, then you get a rather nice (if seemingly temporary) bonus. How long does this bonus last? How many can you have at one point?

There are several different types of "shrines."
Some are shrines to the "good Daedra," the Anticipations - Azura, Boethiah, and Mephala.
The ones you find in caves, in a town's Underworks, or in Daedric shrines out in the wild are typically shrines to the "bad Daedra," the Four Corners of the House of Troubles - Molag Bal, Sheogorath, Mehrune Dagon, and Malacath.
Each of the 7 Daedra have a Quest that you can do for them, provided you find the right shrine. Find the shrine, "talk" to the statue, get the quest, complete the quest, "talk" to the statue again, get your reward. [spoiler]Azura - Azura's Shrine, far SE corner of the big island, due east of Molag Mar. You have to help her keep Sheogorath from interfereing with one of her priestesses by killing the Atronachs, Scamps, and a Golden Saint on a far north island. In return for this, she gives you Azura's Star, a re-usable grand soul gem.
Boethiah - his shrine is currently underwater, NW off the coast of Hla Old. It's marked as an X on your paper map. Find his head underwater and "talk" to it. He wants you to help make his shrine wonderful again. It's not hard. For this you get a fancy sword.
Mephala - her quest is given to you by her priest, one of the Morag Tong. Find him in the Hidden Area below the Arena Canton. Kill a guy, get a fabulous Ring. Easy-peasy. (Note: there might be another Mephala quest, one where you actually speak to her statue - I'm not sure. Anyone?)
Sheogorath - a Shrine in the St. Delyn Canton Underworks. He asks you to kill a Giant Bull Netch with a fork. Hilarity ensues, and you get a fancy spear.
Mehrune Dagon - visit the Statue of Mehrune in the Daedric Ruins west of Ald Velothi. He'll ask you to fetch his dagger. Kill someone, get the dagger, bring it back, he'll enchant it, it becomes awesome, and yours.
Malacath - located in the Shrine of Assurdirapal, on the same island as Ald Redayna, on an island way north. He'll have you kill a group of guys, in return for which you get the best helm in the game.
Molag Bal - honestly, I cannot remember off the top of my head if this guy even has a quest, or where he's located, or what uber-item you get as a reward. Anyone?[/spoiler]As for the Maar Gan shrine, it's a Temple shrine to the Tribunal, specificially Vivec. It's not one of the Seven Shrines you need to visit during The Pilgrim's Path (There are 7 places total you need to visit to become a member of the Temple, where you see 7 great deeds that Vivec did; sort of a Stations of the Cross thing) but the Maar Gan shrine does factor into a quest after you join the temple.

and those shrines which look like yellow triangular prisms, are shrines of saints or vivec's heroic behaviors (like: "vivec slept here", "under that tree, vivec had sex for the first time", "vivec left something holy behind that wall, but don't go over there, it doesn't smell nice, but if u give us 5 golds, u will be protected from disturbing odors" etc...) and they usually give u blessings which ends after 24 hours or they also cure your diseases...there are hundreds of them everywhere...specially in tombs...but i don't give any 5 of my millions... because they fill the pockets of the temple:grr:
i visited that temple before as well... and i just went to the dremora, he didn't attack me, and i tried to talk, and i taunted him, killed him, and left... i did not even think of talking to the priests... i couldn't understand why he was there but i didn't mind...:)
that's just a place u have to visit and receive blessings to join the temple... ah...zaphop already said that...

The shrine in Maar Gan is not one of the pilgrimages of the seven graces which you need to complete to join the temple.
You do, however, get a quest to go there, but I cannot remember who gives it to you. I have a feeling that it may be a mid-range temple quest, but I am not sure. Basically,

you are supposed to emulate Vivec (IIRC) who taunted a Daedra. So you taunt one, conveniently supplied at the shrine.

PS. I think one of the propylon indices is amongst the offerings at the shrine. I could be wrong, though.

yep vivec taunted the daedra so he would the stone with the inscriptions at him instead of the people.

Yes, it's on a silver plate next to the rock. Ownership is the guy down the hall. He can barter, so you don't necessarily have to steal it.

You have to activate the rock after defeating the deadra in order to receive the enchantment.
The quest is given by the head of the temple in Ald'ruhn!
With regard to the daedra quests:
[SPOILER]With regard to the quest of Molag Bal - you get Molag Bals mace and the quest is given by the statue in shrine which is marked on the map just a little north-north-west of Tel Fyr.[/SPOILER]
With regard to the Vivec shrines - they should erect one in the palace of Vivec saying - "Here Vivec had his ass handed to him for the first and last time - by the Nerevarine!"
