I, for one, would only like to play the original levels if they are updated in an engine that can faithfully reproduce the actual design intentions of the originals. (DarkMod is the obvious choice)
Can you imagine even the beginning of Bafford's? Find the well-house. Jump down the well. No, wait - no water in this well... so just climb down a ladder, instead. More like Barford's than Bafford's. And what about the Maw? That would take complete redesign to be playable, and that's why I made my first statement in this post.
There are just far too many times that things like these would have to be changed if the levels were remade in T3. Some of the levels would work (Strange Bedfellows comes to mind), but certainly not all, perhaps most, so it seems like it would be best to wait until the DarkMod is ready, and then form the Original Levels Conversion Guild, or something else that ends with Guild, because that's the only way it will actually get finished! (Cheers to T2X!)

C'mon, that's not fair. The obvious benefit would be to see and play our favourite old Thief missions with a nice facelift.
I'm in agreement that the gameplay (mainly the control) in Thief 1/2 is better, but pretty graphics and cool shadows and physics are nice too.
Yer but there's no sodding water, it seriously wouldn't work. Not to an acceptable level anyway.

Agreed. The graphics would be an added bonus, but the gameplay is the main course in Thief. If that can't be fully reproduced...we're screwed.
