Sometimes I want the most immersive experience possible, no hud elements on the screen. Weapons and items can be blanked, but is there a way to disable the light gem and health bar in New Dark?

you need to edit cam_ext.cfg (see the NewDark docs).

I thought that was a QVar and not a config var? Assuming you mean HIDE_UI_ELEMENTS.
