I think Berserk and Cowboy Bebop are both subtitled, which is a real shame to miss out on as they are pretty fucking awesome.

My list: The Melancholy of Haruhi Suzumiya (a full-on cultural phenomenon), Afro Samurai (+Samuel L Jackson = 1bamf), Samurai Champloo, Wolf's Rain, Lost Exile, Big O (great storytelling in spite of the giant robots), Inuyasha, Full Metal Alchemist, Gunslinger Girls, Noir, Beck (best coming of age anime), Air (art is wonderful), Death Note, School Days (easily most notorious anime of 2007 with the "Nice Boat" incident), Higurashi no Naku Koro ni Kai.
Don't forget recent movies, too ... Millenium Actress, Howl's Moving Castle, Renaissance (a Western GitS), Jin-Roh Wolf Brigade, Paprika.

Yep, that's Satoshi Kon. And as Morte said, I would absolutely recommend Paranoia Agent.
As for stuff that hasn't been mentioned: Rah Xephon, Gankutsuo: The Count of Monte Cristo, Giant Robo, and Planettes are all pretty good.

Can't speak for Berserk, but you can certainly get Cowboy Beebop dubbed.

Can't imagine it captures half the character of the way they express things, most dub jobs I've caught are pretty horrific.
I doubt anyone can talk about "special" bell pepper noodles in such a despondent way. :D

I actually watched the dub of Cowboy Bebop first, and I have to say, it's one of the best dub jobs I've seen. Really well done, all the way through.
The only thing I'd say is that Ed's a little weirdly done, but then what about Ed isn't weird?

I saw one episode of Cowboy Bebop once on that anime time slot that cartoon network used to do, and that one was definately in english.
If dot hack had english dubbed versions I`d definatelty watch those. Watched a few subtitled episodes that came with the .hack series of ps2 rpgs.

Watched the first episode of Cowboy Bebop. Not bad at all. Devilman is next on my list.
Also discovered that .hack received the english dub treatment not long after the ps2 rpg series was released, so having a watch of those in english. MUCH better.

Most people already mentioned these but yes:
Cowboy Bebop
Trigun (once you get used to the silly it is quite good)
Last Exile
Kenshin OVA (the series was :eww: to me but the OVA's were great, first in particular)
Gungrave (a little cliche but well done and excellent sountrack and cool end)
Berserk (pretty much just awesome)
PlanetsES (strange anime, no vampires/big robots/wizards but awesome nontheless, funny early on and dark later on)
Samurai Champloo (not quite as brilliant as Cowboy Bebop but enjoyable and well done, skip the intro though for gods sake)
I saw someone mention FLCL. I wouldnt watch this unless you are a seasoned anime watcher, otherwise the overwhelming jap madness of it will probably drive you insane. If you can stand the insanity its kind of fun but you cant take it very seriously.
I personally hate dubs, its not that I am a anime fanboy exactly but something seems to get lost in translation. For anyone who doesnt think so watch Outlaw Star in both, the english version is almost literally a different (and shittier) show. Just a personal opinion, I think if you make the initial effort to watch the subed ones you will be glad you did later once you get used to them.
