Ninja Scroll - Ninja-Mythology
Best to go for the film (Which I think heretic is recommending) not the series as that was a bit naff. That and Cyber City Oedo 808 I would consider classics.
Another vote for Cowboy Beebop here, both TV series and film. Both fantastic. Probably best to go for the film first to see if you like it, then go for the series as that has all the back story/finale.
Have you seen both of the Stand Alone Complex series? There's also a spin-off film Solid State Society which I can highly recommend.
From the same manga artist there's also (New) Dominion Tank Police. Bit hit/miss that lot. I wouldn't go so far as to call them comedy, but they certainly don't take themselves very seriously. Fun, if you like that sort of thing.
Then there's anything from Studio Ghibli.

Cowboy Bebop.
Last Exile.
See em in that order.

If you like Ninja Scroll, check out Blade of the Stranger. And while you're at it, Seirei no Moribito.

I'll second Berserk. Its neat. Give Claymore and Monster a try as well.
Then theres another one called Outlaw Star, which is equal parts fun and stupid. Reminded me of the Privateer / Elite / Freelancer worldsets.

When I was really young, I remember catching an anime about four brothers called Sohryuden - Legend of the Dragon Kings that was pretty good - but I was 11 or 12, so my memory of it is hazy.

I half misread that as
Legend of the four kings. A show about these brothers who had some sort of hereditary dragon power thing and some government/corporation trying to find a way to control them. Anyway, I remember it being pretty cool.

That's the same thing, I reckon.

I saw Paprika in a video store, liked the cover, and rented it. The animation was good, and the translation wasn't awkward (watched with subtitles), but the pacing was a bit jerky and the plot was difficult to follow. Still, worth a rental, at least just to see some of the interesting dream sequences.

Rebuild of Evangelion 1.0: You Are (Not) Alone
Samurai X better known as for the OVA`s in their english versions. Those movies are excellent. Watched them on youtube a year ago roughly.
