Chicken and ducks are lousy pets, they're too daft to be trained, won't remember their name etc. Geese are pretty smart (much like dogs). Plus they'll trim the lawn and won't dig it up.

Yeah our area is no roosters and up to twelve chickens. When we actually do this, it will be like 5-6 chickens tops.

+1 on no broilers.
Mind you broilers are suppsed to be raised for food, not for laying eggs.
Dont get a rooster if you'd like to avoid eating fertilized eggs, kind of a no brainer. And watch 'em when they're young, if youre only getting a half dozen or so it probably wont be a problem, but little chicks like to smother each other to death to keep warm and when they're a little older.. are pretty much cannibals. I used to raise about 1200 chickens a year so I've seen everything.
Also collect the eggs soon after they're laid because for some dumb reason they like to eat them too.
Also most chickens can't fly very well if at all, especialy broilers. But the right kind of laying hen doesn't have a problem with it so be sure you have them in a coop or somewhere that they wont be able to get out of by flying.
Also, feed them proper feed. This free range crap is just that. you'll have healthier birds and healthier eggs if they get the proper balanced diet they deserve. All free range birds eat is bugs.

Can I just emphasise (though I won't go on about it any more!) that you should get ex-battery chickens if possible as you're getting proven layers that have been living in a tiny box their whole lives and are only rescued when they're about to be killed because they don't lay enough to be economically viable any more.

I didn't read your previous post till just now and I concur, Sounds like a solid plan, that way you don't have the worry of caring for chicks which can be pretty hit and miss.
Also the pellets are usually for growing birds, but it depends on the formula I suppose. We never fed our adult birds any pellets. As far as table scraps go, don't feed them anything really acidic, like tomatos, they get kind of sick. And they LOVE zucchini, Plant one plant in your garden and you'll have enough to feed yourself (if you're really that short of food.. ) and the chickens and whoever else would want any.
