But the spell has two parts, draining and absorbing, So it subtracts health from you and adds it to the vampire. When it gets reflected, it can't just reflect half the spell because Morrowind doesn't work like that. Instead, it reflects the entire spell, 'flipping' it. ... Right?

Absorb health does NOT damage you if it gets reflected.
It always returns its health to the caster whether its reflected or not.
An ebony scimitar enchanted with 100 drain health for 2 seconds is a SICKLY powerful weapon. Will kill a golden saint in 1 swing usually.

put it this way: when using a weapon enchanted with aborb health to attack reflect-protected monsters, I have never found myself losing any health (whereas if enchanted with something like fire damage it can become a painful experience).

Exactly. An absorb health spell is 2 parts. Damage on target. That part can be reflected. Then theres a heal on you. That part is unaffected by reflection.
So if you hit with absorb health and it gets reflected, you will take the damage then you will be instantly healed back for the same amount.
This is why absorb health is good and elemental damage is not so good. Reflected elemental damage is ouch.
I have never tested it, but it may be possible that if the damage component is enough to kill you in one hit, you might die in between the 2 spell effects. That is, you take damage, you die, then heal lands, but you are already dead.
I've never tested this though. It would require a character with very low hit points.
Of course if you had elemental damage instead of absorb, it would kill you anyway.
Really I can't think of a good reason to use elemental damage over absorb.
Maybe against targets who don't reflect, but have high magic resistance and lower resistance to something else.
I can't be bothered to remember such things though. Combat in this game is already rather easy.
