The Steam version is definitely Old Dark, so you'll want to patch that up unless you're stubborn.
the steam version comes with ddfix which i believe applies the affinity fix already. though there would be no harm in using imagecfg on it as well.
(still, all moot because op is using t2fix to get newdark exes which dont need the cpu affinity fix.)

if there are crashes, then there should be crashdumps and logs. post them? using any additional mods perhaps?
also the steam build is a wreck, it's the hybrid 1.07/1.18 version with outdated DDfix, do not want.

Can you elaborate on that a little? I've been using the Steam version, and I've patched it with T2Fix, but if it's going to cause issues later on, I'd like to know about it now rather than later.

this only matters if you are running unpatched - T2Fix will get everything up to date, no matter the source.

do not do this to deal with the multicore cpu bug in olddark versions of thief! using msconfig like this affects everything running on your pc, not just thief.
if you really want to run the
original, olddark, disc versions of thief/thief2 on a multicore system without using ddfix, you should use (
https://robpol86.com/imagecfg.html) imagecfg to patch the exe for cpu0 affinity, exactly like the ut99 example on that site. no system-wide changes needed; no rebooting required.
I tried this and it doesn't work, at least for me anyway. For clarification, this applies to the disc version only. My Steam copies of TG and T2 work fine on multicore.
