Yup - leaving it overnight is the way to go, Namdrol. Not sure where the duvet comes in, though - why doesn't he just leave it in the pan with the lid on?

I think it's just to keep the heat in like in a straw cooker, to keep it cooking for a few hrs, he's from Paisley and very serious about his morning gruel.
He's even got a spurtle.
(which is a good old Scottish word for a kitchen implement whose only task is the stirring of porridge, and that's not a joke)

I forgot to add that I learned to use my crock pot for the steel cut oatmeal. Before I go to bed, I get it all ready, turn it on low, and let it go. I wake up to a nice hot bowl of oatmeal.
Best way to go with that kind of oatmeal, slow cook it. I also add some milk during the cooking process, its not all water. Tastes a bit better too.

Though in your favor, the word porridge does sound tastier than oatmeal. Oatmeal sounds like something you'd give a horse, not have as part of a complete nutritious breakfast.

Considering half the forum is British (a statistic I just made up), I just go with the attitude that both variants are co-equal and the thing to do is just weave in and out of both as the situation calls for (NB, this does not include newb, leet, or unintelligible masso-speak).
And if you really don't get a term, you just go to Google or Urban Dictionary and pretend you knew that that's a perfectly normal way to say X all along. Only occasionally that gets you in trouble, e.g., with my recent boro-fail. Though I understand the temptation. Porridge sounds like it's straight out of a fairy tale to American ears and it takes about 50 times hearing it said with a straight face before it start sounding anything like a reasonable thing to say. That's where the pretending comes into play...
