I don't think I've ever had porridge. Though from the sound of things, it seems somewhat similar to grits or cream of wheat.

In my (Scottish) opinion you do need a tiny bit a salt when making porridge, but it's terribly easy to get the measure wrong.
However, that's a
completely different discussion to what you have with it after it's made - salt (or butter) would be horrible. Plain milk is just fine, but there's a certain perverse pleasure to having some cornflakes with it (don't knock it until you've tried it)...

And I don't put anything in my porridge that appreciably alters the texture so no fruit, no cornflakes (you sicko), just honey or if I have to sugar/syrup. But milk and honey, because that's the land I come from yo.

One of the guys where I live makes our porridge.
He uses groats, boils it up the night before then puts it in a big polystyrene box wrapped in a duvet.
A pinch of salt when cooking it makes a big difference btw, just as you put a pinch of salt in with a cake/biscuit mix but it's foul to add it after it's been cooked.
Butter and honey for me. The butter melts and you get this lovely golden liquid butter with porridgey goodness.
There was a big fad for tahini in porridge here but I never really got it.
