You can't eat them off the tree because they are too bitter. Unearthly bitter. It used to take weeks and weeks to make olives, mass produced olives aren't made the way Piglick described, I believe they use NaOH (or H2O2 can't remember now) now to decrease the time.

Haha, yes. It was sounding like olives burnt your house down and raped your pets. They're good sources of monosaturated fat, hence olive oil being healthier than, say, animal fat. And I'm sure there are vitamins and minerals of some kind.
I'd guess that olives were first picked and used straight off the tree until some people experimented with trying to make them taste nicer? Maybe.
