Sandy Bridge is the new Intel platform, which just launched. I think they're doing something like integrating graphics into the CPU, but of course you can still use your own video card. There was recently a (

What Brian said. 500-600w is about all you need for the machine you're building. What's important here isn't the wattage exactly, but the quality of the PSU itself. Any good brand name will do you alright. Corsair, Antec, or Cooler Master. I'm sure there's more nice PSUs out there, but these are the three I'd recommend first and foremost.
Remember, this is the thing powering your new machine. Skimp on the quality, and at best, it might work okay, and maybe crap out in a year or two. You're out the $20-30 you spent on it. At worst, it goes out and fries your motherboard, graphics card, and harddrive. If that happens, you're out a helluva lot more. I don't know about you, but I wouldn't want to risk that.
In fact, I just got through buying a new power supply myself. I had to get a new one because the ball bearing on the fan must've warped, and the thing sounded like someone was playing an out of tune didgeridoo.(
