You don't know what a bullet does to a person. You might have a 'neat .375-inch hole', but your tissues are turned to paste, your organs have ruptured completely, and your bones have shattered like glass- throwing tiny bits of shrapnel into all the surrounding flesh. Hydrostatic shock turns a tiny piece of metal moving very fast into the equivalent of a hundred-pound sledgehammer. I'd much rather be knifed.

Er, that hasn't been conclusively proven yet. Not the best argument to back up your position.
In any case you're a lot more likely to die quickly from a bullet than a blade. I don't know about you but I'm not really into pain.
@your edit: Um... if that were true, nobody would survive gunshot wounds, and they do.

Even leaving aside hydrostatic shock, there's the fracturing of bone if it's hit by the bullet. There's also the possibility of no exit wound, meaning that you will require extensive surgery just to get all the bits of bullet out, let alone close the wound. A knife, if left in the wound, at least restricts blood flow. A bullet will sever major arteries, and if there is an exit wound, it may well cover significantly more area than the knife. A knife is flat. A bullet is round. The knife leaves a slit. The bullet leaves a gaping hole.
