All mostly good to great games there. I can understand if stuff like Dark Souls or Fallout 4 are not your thing.
But any self-respecting Thief/ImmSim/TTLG fan really should play Dishonored 2.

I guess all of y'all's lists are more or less my list too.
Anyway, major PC game series I have but haven't gotten to yet include--
The Hitmen, the Assassins Creeds, the Splinter Cells, the Calls of Duty and Halos, The Borderlands, The Witchers, The Deadspaces, the Gears of Wars, The Amnesias (did I play Penumbra when it was still a demo?), The Bioshocks, Thief 4, The Left 4 Deads, The Saints Rows, The Mafias, and any Star Wars game after Tie-Fighter.
I think that covers it. I don't have anything against them per se. They're in the queue to get around to someday. I tend to play a smaller number of cult games obsessively though, ones that really pull and keep me in ... Like Mirror's Edge, Fez, some roguelikes, some sims, etc.

Dark Souls series for me, i have 2 of the games but just never played them, mainly because of you guys. Just sounds way too much like work.

I played a few hours into the first Dark Souls and I wasn't feeling it. I really liked Shadow of the Colossus and, say, Diablo 2. So the issue wasn't that it was a hardcore hack & slasher. Maybe I just didn't get enough into the world to be drawn in. In SOTC, rather quickly the game got you on your horse into that gorgeous open world. And Diablo 2, well, my memory isn't that great about it now. I remember it was like click crack, and I did like making it in to see new areas.
At least as far as I've gotten into DS 1, I haven't gotten to that kind of feeling yet. I feel like if I get further on I would, but then it's a matter of not finding the motivation to get over that hump in the meantime then. Right now my character is saved in a linear bit with a bunch of skeletons shooting arrows everywhere, and I just can't.... But maybe someday!

Spelunky was the first roguelike platformer; along with The Binding of Isaac, it kicked off the whole procedural-generation craze. At this point you probably know whether the genre of "roguelike platformer" is one you enjoy; if so, it's worth a look.

I could write an endless list of big names I haven't played, but the one that still stands out is Skyrim. I constantly run into mentions of this game on the internet, it is still referenced and memed about (no doubt partly because Bethesda keep re-releasing it on every platform), and in general it seems like everyone and their dog have already played it, except me. I also actually own it, but somehow I've never gotten around playing it. Oh well, maybe one day.

That kind of sounds like you tried to go into the catacombs early in the game, which is... a terrible idea. You are technically free to do so at any point, as the world is quite open, but that area is nearly impossible for a low-level character. Trying to go there first and not realising that there are other places you can go first could easily turn you off the game.

Yeah, it sounds like that. I mean, it could also be Blight Town, but that's not nearly anywhere near the first few hours of the game. The catacombs is the one early area that throws people off a bit, I think. But it does signal 'turn back now and come back after you've done some shit', because of the level of crap it throws at you.
