The Hermit mentioning his name Raeul and Valerius was mentioned already. :p
Another place to find names of the characters is in dromed but the players would most likely never see those references.

In Life Of The Party a conversation is held between a Margaret and a Christopher about the servants. The recorded messages refer to a Vilmer (or Bilmer?) as the guide.

"Somebody already got to Trogg" is what the Downwinders in TG sometimes say when they have discovered a body. So Trogg is someone there.
Not actually tested this, but no doubt if you take down Sutter at the front entrance and let him get discovered, they will still refer to Trogg as having been already got to :)

After reading through the voice file transcriptions (
http://thief.wikia.com/wiki/Voice_File_Transcriptions) here on the Thief Wikia, I've compiled a list of all the names spoken aloud throughout the Thief trilogy. There's over 200 names here, with the vast majority coming from TDS.
First, a few notes:
- Based on the OP, I interpreted the purpose of this thread as looking for the names of minor characters. Therefore, I've ignored references to the names of major characters, as well as characters who played significant roles in their respective mission/s. Those excluded include Garrett, Lord Bafford, Cutty, Felix, Ramirez, Lord Randall, Lord Donal, Lord Reuben, Giry, Raoul, Lady Valerius, Cribs, Murus, Viktoria, Constantine/The Trickster, Basso, Jenivere, Lt. Hagen, Lt. Mosley, Sheriff Truart, Vilnia, Lotus, Cavador, Lord Gervaisius, Karras, Morris, Lord Julian, Lord Ember, Lady Elizabeth, Heartless Perry, Thomas, Black Market Bertha, Marla, St. Edgar, Greidus, Dyan, Larkspur, Artemus, Orland, Caduca, Isolde, Dahlia, Sam Swarthy, Cpt. Moira, Edwina Moira, Rafe, Ramien, Carmen, Inspector Drept, Lauryl, and Gamall/The Hag.
- There is no guarantee that the names from TDP/G and TMA are spelled correctly, unless the name in question also appears in written form somewhere. TDS names should all be correct, because subtitles were included.
- When possible, I've included a brief description of each character. For names mentioned in an NPC's generic voice files (e.g. "Is that you, Kevel?") that don't apply to a specific character, I instead wrote "[Name] mentioned by [NPC] when [investigating/reporting a corpse/etc.]."
- Though I tried to be as thorough as possible, there's still a chance that I missed a name or made a mistake somewhere. I'm only human. :)
