In Daggerfall these sorts of things were determined by chance. Each monster (and item) had some sort of chance of encounter associated with it based on player level. Ancient Lich at level 1 = 4%. So you wouldn't see them very often, only just occasionally enough to make you a teeny bit afraid before going in that dungeon. Equipment too. I still remember the absolute joy I felt upon happening across a pair of Daedric boots very early in the game. 80,000 gold and in those days you could get close to full price. Going back to the exact same place (I still remember the layout and monster placement intimately) and exact same chest every single subsequent time I played the game I never found them again.
In Morrowind and Oblivion it seems like an absolutely set and static list, no probablities involved. At such and such level these are the monsters you will encounter and no others.

I'm looking for a mod that replaces the map with a... more or less in-game ariel screenshot, that doesn't suck and look confused(IE: Has editing or something to make it legible)

Haha.
I like that one.
I was trying to remember the correct spelling, and I got confused thinking about a girl I met on an Atlantic ocean beach, she was named Ariel, was about 5'4, had blonde hair. I, of course, hit on her a little. It was quite dark but she wasn't fat so she was probably hot. IT was going well until she told me she was 12.

Haha.
I have another thing for girls from Britain, I ask for their dental records and make sure they've spent at least 4 digits(in Euros) on their teeth.
