You just reminded me of my other favorite moment: first walking into the Cathedral, picking open the main door, nope-ing your way outta there after seeing the Haunts and going in the side door instead, creeping across the marble and traversing the surrounding catwalk, roping up to the beam and walking through the attic, hearing the horribly creepy distorted bell tower music and discovering Brother Martello's dead body. The first time I played I didn't actually know you could just go straight up to the altar and grab the Eye, I thought it was more complicated, so I explored almost the entire level before I found out that was what you were supposed to do. Despite having no idea what to do and making no progress, I wasn't even remotely frustrated, because the atmosphere and the tension and the level design and the ambient noises were so good I was just happy (and terrified) to explore the level aimlessly. Even back when I was first playing this game and I didn't like the undead levels I loved this level to death and it's still one of my top 3 favorite Thief levels ever.

Another great moment from RTTHC come to mind: I had a weird bug where some corpses would always have their head turned in a special direction even if their body is lying in another direction. Picking up Martello and seeing his head turned in a strange direction after dropping him again really creeped me out.
Another creepy moment was when I knocked a zombie down and had to run past him to escape from another one. While the other zombie was slowly walking behind me the zombie on the ground turned his head while still on the floor looked at me. Then he suddenly sprang up and killed me with one blow.

That's not a weird bug. Assuming you're playing under NewDark, it added a head tracking feature where AI follow you by turning their heads, and it applies to zombies playing possum as well as normal AI.

Getting beheaded in that corridor in the building where you get the talisman of water - The Lost City mission (Thief - The Dark Project). It really sets your heart racing.
Or when getting back out with the talisman of water and then you hear those craymen screeching outside.

Following the instructions given for adjusting gamma to the letter, then falling down holes you did not spot in front of you, turning a corner into areas and realising that you cannot make out a thing, and so on, and up that gamma slider goes.

The moment you first encounter a huge spider in mines below Cragscleft - I immediately hit "escape" and exited the game :) Took me some courage to get back into. Needless to say, "Escape!" was a nightmare the first time I played it.

The moment when you first hear Karras' voice :)
The moment when you read the instructions to manufacturing a guiding beacon and your head starts to spin.
The moment you finish manufacturing the guiding beacon :)
And of course, the feeling of a challenge lying ahead when you start a huge non-linear mission with many different ways to go and you're trying to get your bearings. And then, the feeling of satisfaction when you fully explore the map and can get your bearings anywhere. Unfortunatelly, you never experience this things twice, so that's where new FMs come in))

The moment you realise that Karras is also Stephen Russell. Actually, I never realised that in either my first or second playthrough. Read about it somewhere and was surprised.

Ever play Limbo? I've heard it said that that contains one of gaming's best spiders.

That moment in the first mission where you can hear the guard approaching from round the corner but don't actually believe it because sound in games doesn't work like that and then he appears and you throw Garrett against the alley wall and yourself against the wall behind you, desperately looking for shadow to hide in, praying he doesn't see you, that's the moment that sound and vision match up so perfectly that you're immersed and you're not playing a game any more, that's you dodging a guard, that's you throwing yourself back from the screen & hitting the wall of the room your in, that's when it got really interesting.
