So many moments... I tried to think of some from all four games, but Thief 1 has so many I had to narrow it down. I must have played that Bafford Demo a thousand times waiting for the game to come out in '98.
Thief 1: The very first two conversations you hear, "going to the bear pits!" and Benny and the other guy's "but the people to worry about are on the inside"
That first zombie that pops up in the mines at Cragscleft! As I slowly approached it, my friend (who had already played that level) lies and tells me not to worry, it won't jump up or anything... so I just run over real quick to take a look, needlessly to say, I screamed like a little girl, fell backwards in my computer chair and rolled out on to the floor! :tsktsk:
Thief was one of the first games with EAX true 3-D Surround Sound and I went out and bought a 4.1 speaker system. I can still remember that I was so immersed in the game that when a guard walked up behind me, in "real life" I turned my head around a few times lol
Trying to get into the Alarus Extension, You can't tell me the first time you played you didn't try to climb that pile of rubble! (Or later on trying to find the Bow Upgrade!:p)
Thief 2/Demo: Life of the Party/Unwelcomed Guest, that hilarious argument between the four guards!
Thief 3: I loved the ending, that sense of coming full circle. The final glyph is "The City" itself, Garrett has spent is life trying to get away from the Keepers just to find out he's the one true Keeper, and of course the last scene where the little girl pick-pockets him
The Cradle; Frozen sh**less in a dark corner because the lights near me are flickering because a puppet is somewhere nearby!
On the same subject; I was lockpicking one the cells to get a toy and a puppet actually snuck up behind me and started attacking... I had a mild heart-attack
Thief 2014: Got to go with The Forsaken; specifically the scene in the female ward where the door blows up! You're looking through the keyhole at a girl trying to start a fire with her back to you, you start to pick the lock and Boom! That image of her walking through the flames at me is burned in my mind!
All Thiefs: Lockpicking a door, just to have it fly open and a surprised guard going "What the Hell!?" Even after almost 20 years that still gives me a scare!

I had a similar moment on first entry to the place. Just didn't want to walk down that first corridor as the atmosphere was so creepy.
I Sometimes think a great mod for Cradle would be one that randomises the enemy locations so they could potentially appear anywhere, even in that first corridor, or the cellar it leads to. And also it makes them completely silent.
Another good moment I've remembered is at the end of The Haunted Cathedral when you finally reach the cathedral itself and climb the boxes at the side and can hear all sorts of awful noises coming from within the place.

I absolutely adore the Cradle. While I love Thief 3 as a whole, this mission makes the game a necessity to own. A tweak for this level like the one you mentioned would be very interesting.

When you listen for the first time at the incredibly atmospheric and haunting "Old Quarter" tune in Thief 3.

Yes the Old Quarter track is a good one. Also liked Soulforge, as I've mentioned, and the tracks for Masks, Framed, and the title is Rising Hunger and I think it belongs to Assassins.
And not forgetting the Opening beats at the start of each mission.

Yep, those tracks are all pretty good, and Soulforge in particular really fits the level's atmosphere, but by far my favorite has to be "A Woman Named Viktoria," which plays during the briefing for The Sword. The almost magical sounding tones combined with the distortion halfway through the track sets the mood perfectly. It seems normal on the surface, but there's something unsettling about it, like something strange or even dangerous lies just beneath the surface. It's a perfect introduction to the defining mission of Thief 1, and it's still pleasant to listen to even outside the context of the briefing video it was made for. I do also love the music from the Horn of Quintus during Down in the Bonehoard. Hearing the music faintly playing in the background while in the burrick caves gets you curious, and then finally getting to the Halls of Echoing Repose and hearing the long, melancholy notes echo all around you in the massive catacombs was an incredible moment. Garrett's snarky comment about "tombs with piped-in music" was just the cherry on top. I always try to grab the Horn last whenever I play the mission just so I can listen to that great music for as long as possible.

Such a great track, for one of my favorite levels of the game. It has a calming feel to it, as it seems the burricks agree with me, but you also feel that not is all as it seems. You are not the only one who grabs the horn last to keep listening to it.

One of my favourite tracks is in the Mage Towers, when you're in the bottom part of the central tower, in the staircase

Same here! I love when I get to the "Halls of Echoing Repose" and hear that comment! When I die, I want a below ground crypt with piped in music of the "Horn of Quintus" on loop. :joke:
These are all great tracks, I always loved the Assassins track, and The Sword with that creepy giggling. One of my favorites though is The Haunt Cathedral, I always pictured that low whining sound to be a far off distant lone burrick whining at the night, like a lone wolf howling at the moon. Just creepy great atmosphere!

Earlier I mentioned the moment when you first meet The Eye, but it wasn't due to The Eye but due to the awful noises you can hear coming from within the Cathedral through the opening. But speaking of The Eye, I thought it had a great and quite creepy line in Thief DS:
"Do you miss your eye, little man? I've seen many interesting things with it. Someday I might come looking for the other one."
