Half-Life 1 has a stack of the sort of mods I think your after, if your more after a complete change of gameplay style (like switching to Portal or playing as an enemy or something).

Thief 1 had a mod where you played as a zombie that I cant recall the name of and Doom 2 has a shitload of mods with a complete gameplay style change.
