Let's say this observation runs its full 3 week length and this guy still hasn't eaten or drank a thing and his vitals are exactly the same as when he was checked in... what then? What the heck is sustaining him? 3 weeks is a big difference from 70 years, yes, but considering the human body needs water at least once a week at the very least, I'd say 3 weeks is something of an accomplishment.
Then let's assume they expand the observation to 3 months and things are the same. Is there any existing scientific theory describing what could be going on here?

Forget the three month time period - three weeks would be more than impressive with no water. Ten days or so would be manageable but above that survival is increasingly unlikely. I'm sure there are plenty of plausible scientific theories about what's going on here, but none of them involve no intake of water or nutrients by any means possible.

Then either (A) the observation failed - i.e., he snuck out for cheeseburgers and wasn't caught - or (B) thermodynamics are incorrect and he will lead us to a future of unlimited free energy, yay! Sadly, (A) is much more likely.
