I use ellipses, too, and there is no need for bullshit about this. I use them when I'm too lazy or momentarily unable to properly contain my thoughts in a well organized sentence. Other times, I use them when I want to "go there" but not all the way. Either way, I personally believe ellipses represent incomplete communication (on my part). I wouldn't know what the reasons are for anyone else, really.

Since email is a bizarre halfway-house between the written word and some kind of IRC 'conversation', I tend to use an ellipsis in place of a comma where I feel a more exaggerated pause is needed (in an attempt to be vaguely in-keeping with the way I express myself in real life).

Stylistically, they're useful for giving shit jokes a little bit more impact in text form or leaving a 'trailing comment' effect after certain sentences ... like this.

Mostly you could just use a comma instead, but it doesn't always look as nice. And if it doesn't look as nice, it doesn't read as nicely. Obviously, though, if you simply throw them everywhere like radioactive laundry then it just gets messy.
