The only vineyard I remember is the one in "Embracing the Enemy", but I do not remember any monastery or similar structure there. Garrett tries to keep another thief from assassinating the vineyard's owner, but that's not the end of the strory.
My notes on the "When Still..." campaign tell me that the third mission, "The Ritual", takes place in a monastery that seems to have a wine cellar, maybe a large one.

I don't know if this is intentional or not, but did anyone else notice the naming convention for those missions follows the same style as Ominous Bequest and Broken Triad?

I'm curious as well.
I sorta get "Ominous" and "Mysterious" being somewhat related, and a "Bequest" and "Invitation" could be similar also.. But I'm not seeing anything of correlation between "Broken Triad" and "Ultima Ratio". Now, if the 2nd in the latter series had been something like "Fragmented Trinity", I'd say okay, we're onto something... but, I don't see anything.

So here's another long shot, but does anyone know of any FMs that feature large books / tomes that are closed but then they can be opened (on frobbing them, or any other action..) so that they lie open somewhere like on a table or pedestal?
Basically looking for a "jointed" book that can be opened to lie flat.
{Someone had mentioned T2X. Was wondering if there were any others that you know about, too.}

Soul Tear's "Keeper of Infinity" campaign has at least one such book, located in the second mission, "Raven's Nest". This book can be found in the apartment of the man who has changed it into a library-like set of rooms. Turn to the right when entering the apartment, and go into the niche-like part of the room. On one of the tables you should find a book that has a story about some bandits, and that book should open and close when used.
The book is not particulary large, but other than that, this suspect fits your description.;)
Another such book might exist in the first of these missions ("Bad Venture", campaign version), in the house of the stables' groom (who has gone insane). There is a diary on his desk. I am not sure whether this book is one that visibly opens, but at least you can rech this one more easily than the one in the second mission.
Finally, I dimly remember that in Zontik's "Patriot" campaign, in Mission 9 ("Enemy"), there's a theather on one of the floors. One of the actors' dressing rooms has a somewhat spooky book that might also open when used. Once again, I'm not sure.
