Well, he is using a laptop in conjunction with the sampler, so we haven't avoided that issue altogether.
It is interesting though. He's got the Max patch rigged up to play samples, and it's connected to a drum that he made with pressure-sensitive pads in it (this is for my main band, not the ambient stuff). Then later we decided we could use another sampler, so we converted the pedals from an old electronic organ into a second sampler using another Arduino. It plugs into the same laptop and runs through the same patch, which only had to be modified slightly.
And you're right; this stuff is definitely more finicky than dedicated devices. But it's also a lot cheaper, more flexible, and it looks more interesting from an audience perspective.

I just worry that my laptop handling things fine at 25 C during rehearsal might not translate to performing at 30 / 40 C during a packed gig. I've seen bands just stop mid song and have to apologise and stop playing before.

Well, one nice thing about the Macbooks is that with their metal casing they're basically a giant heatsink. I can only think of one particular venue here where it could possibly get hot enough to cause problems, but I guess we'll see how it ends up.
