Urm, I usually run away from Walton Simons aswell, since the last 5 times or so through the game I've been playing non-lethal, or non-combat, or even non-confrontation!
But I never had problems with him. He never killed me once, from what I recall. Usually I get him in the sub base with the Dragon's Tooth Sword, which isn't particularly difficult.

Against Simons I bashed the cloak quickly after the conversation, speed ran to the mining machine and jumped on top, decloaked and shot him full of darts. Muahaha!

I usually kill Anna with whatever I have(usually the assault rifle) and the last time I killed Gunther I got him with a single 20mm HE grenade into the chest. IIRC, when I last killed WS, I think I GEPped him or somesuch...

I just had another unfinished game of DE:GOTY; this time with Mastered Pistol skill, I unloaded 4/5 rounds from Stealth Pistol into Anna's head from the back ... she barely had time to react ...
