I'd get the official plugins from elderscrolls.com like BCsounds and the special arrows shop for Vivec. Quote:

I'd also get the visual texture pack that does wonders to the landscape (looks insanely awesome) if your computer is powerful enough. You can also get something called Forests of Vvardenfell which as you might guess, add lots and lots of trees to make the game more beautiful. I always found that much of Morrowind's landscape seemed dead. Then again, I guess you could argue that the way the land is, is the theme of the game.
