I would love to play all the Thief Gold/Thief 1 fan missions, but prefer the Thief 2 platform to play fan missions on.
Because the engines are different, do you think they will someday make a converter program to simply convert the Thief 1 and Gold fan missions?
If there is nothing like that..... maybe something for someone to work on?
Or is that even possible?
I know there have been some Thief 1 and Thief Gold fan missions converted to Thief 2, but do not know how difficult a process it would be to do them all?

As you mentioned, T1 FMs have been converted into T2 FMs, so the manual process is always an option.
While I'm certain a faster, more automated process can be done, the second question is whether it should be done in the first place. (The first question is checking whether the FM authors in question want this to happen or not). There's enough of a difference between the two engines that people will notice the difference, and sometimes T1 is the better engine to work with, especially if you're looking for a certain aesthetic to your creation.
A recent example I came across is "The Mines of Margroth", the first mission of the "Ruins of Originia" FM pack. The T2 version has more stuff in it and is fun to play, but then I came across an old T1 beta release of it...and it looks and feels a lot better in many places. The town has different wall textures and therefore looks much better, the burricks eat glowing mushrooms and the demons are much tougher enemies than in the T2 version. As a result I'm keeping both.
At the end of the day it's a matter of taste.

Monastery of St. Fera from T1 to T2 back in 2003 without the authors permission. It caused quite a furore and accordingly most, if not all, FM sites initially refused to host his converted FM's.

I see it as it was released to the public as a FM, so what difference does it make if it is in T1 or T2 form?
It is the exact same mission.

There are actually significant differences between a Thief 1/Gold and a Thief 2 mission, visually atleast if they predominantly use stock resources. The Thief 1/Gold textures are notably more vibrant and colorful than their Thief 2 counterparts, and not every Thief 1/Gold texture was converted for use in Thief 2. Copying them over isn't an easy task either, since Dromed was never built to support reusing significant amounts of geometry between levels, so just directly importing geometry leads to all sorts of incorrect texture assignments and some visual anomalies that can be quite hard and time consuming to fix. Then there's all sorts of other stuff, like setting up burricks, fire elementals, mage attacks, bugbeasts and apebeasts with swords to work correctly.
In short, it's possible, but not necessarily easy, and may not be worth the time and effort in the end.

Huh I might be saying something stupid (yet again) but… since the NewDark executable is based on Thief 2's code, does installing the NewDark patch (via TFix) to play your Thief Gold FMs not equate to the same thing as what you're asking for?

T1/TG games cannot be played with a T2 installation. You must have a T1 or TG set of disks. Once TFix is set up, then you are sort of playing T1/TG as if it were T2, but you still cannot use the T2 exe to access the T1/TG games. However, I picked up TG on EBay for about $5 or $7 a year or so ago, so it is not a big deal to do a second install. I have TG in one c:\games directory and another for T2. Easy and no worries.

That's only partially true. It's true you can't play T1/G missions in your T2 install folder, and it's true that you must own and have an install of T1/G. But you actually do use the T2 exe to play T1/G if you're using NewDark, it's the same exe file for either game; that's what ZB was referring to, and also the reason why the original question is more or less moot.

You can't bunny hop in T2, and I'm sure that will cause problems if you convert a mission that relies on it, e.g. jumping over a chasm
