Hello!
I want to replace my current 2 monitor setup with a single ultra wide. I mostly use the machine for gaming, music production, & coding / design work.
Something with a decently high resolution and refresh rate to avoid eye strain would be good.
Also, it needs to be VESA mountable.
Being GSYNC / FreeSync compatible would be desirable.
I have tried reading a few "How to choose a monitor" articles and tried browsing online to find something, but seem to always end up looking at either absurdly large monitors >1m wide, or cheap monitors which aren't large enough. I am looking for something ideally around 80 cm width. Curved / flat are equally fine.
Any ideas?

It's not exactly what you describe, but I've been very happy with the LG 34GK950G-B. The screen diagonal is roughly 86cm, which probably means that the width is somewhere below 80cm, but other than that I've found it to be as good for working from home as the two screens I have at the office. It's also great for gaming and for editing podcasts and videos.

I went with an LG 38UC99 and have no regrets. It's a 38 inch model with a 2.3M radius curvature (pretty mild). It has FreeSync, but tops out at 75 Hz. It has built-in speakers which radiate sound through the screen. The audio quality isn't going to blow you away, but it's handy if you don't have enough desk space left to place computer speakers on either side. It is about 90 cm wide though, which is wider than you asked for. But if you have the desk space to fit it, I think you'll appreciate the extra resolution for productivity work. It's 3840x1600, so you don't lose any horizontal pixels compared to using two 1920x1080 HD monitors side by side, and you gain some in the vertical. A killer feature for me is the picture-by-picture: you can display one input on the left half of the screen and another input on the right half of the screen. When working from home, I often have my work computer on the right half and my desktop on the left half, so I can monitor my personal email while I'm working, or have the news on, or control the music I'm listening to from my desktop, etc. Or when I'm not working, I can still have my work up on the side in case somebody needs to IM me. The PBP feature is what up-sold me to the 38".
There are better gaming options in the 34 inch range, e.g. more curvature if you want that, GSYNC, higher refresh rate. And the lower 3440x1440 resolution will be less taxing on your video card.
I wouldn't bother considering the 29 inch ultrawides because the 2560x1080 resolution isn't enough to replace a dual-monitor setup.

Both solid options, but the second one might be prohibitively expensive given I'm currently the sole earner and I've got 2 kids.
That PBP feature is great though!
