So early on I got a painted horse - it was the first stable I went to. Now, that the slowest and cheapest of them all. I was going to get a more expensive one but read you get the best one for free as part of a Dark Brotherhood quest, so didn't...
Anyway, was riding to Bravil - on the way, some bandits started going after an NPC. I got off my horse, chased them down, saved the NPC. When I get back, my horse is gone. I figured it would be back if I entered and then left the city, but it wasn't. It's just gone. What happened? Do horses run away and be free given the chance?
Also, the lady at the stable in Bravil said their horses were 'faster than painted but hardier than chestnut' or whatever. So is speed/endurance inverted? Ala will the $5000 horse die in just a few hits?
And lastly, I've had conflicting reports about being able to own more than one horse - one guy said you could, one guy said you couldn't...any authoritative source on this?

AFAIK your own (bought) horses stay where you left them. Are you sure yours wasn't, hmmm... appropriated in another way (as the first stable - in Imperial City - doesn't SELL horses, they breed them for food)? Stolen horses may wander off and eventually go back to their home stable.
As for the statistics, bay and chestnut horses are less resilient than paint horses, while White and Black horses are significatnly tougher (especially given their speed) The bottom line is that wou want a black horse for speed or a white one for its HP. I don't know how the Dark Brotherhood horse behaves. And no, speed/endurance isn't inverted. It's just the case with the 2 best ones - you either get the faster or the tougher one.
Oh, and BTW, if you want a paint horse just do the very first main quest. You get one for free in the Priory.

I was the one who said you could own more than one. After buying my second, I could mount both without any trouble. But I fast travelled away and haven't even searched for my first horse, so I don't know if it stays put or not.

As for horses dissapearing, you should always be sure the area is clear of enemies when leaving it, else it might get into a fight and get killed or drawn away. Happened to me once, left the Paint Horse outside an Aleid ruin. When i came back i couldnt find it. I think "Meh, i just fast travel. It'll be there then". Wasnt so. Reloaded, then scooped the area. Found it a good bit from where i left it, getting pummeled by some stupid conjurer and his daeadra spider. If you get another horse the Paint horse returns to Weyon Priory (or how that place where you get it is called)

Can black horses outrun enemies?
I'm having the problem where I can't go ANYWHERE without having enemies attack me every 5 feet, it's really obnoxious when you have a location in mind but don't want to fast travel - if I can fast travel there without taking a hint of damage I should be able to ride there (staying on the main road) and do the same. Grrr.

That's why I use the "fast horse" mod - it doubles all the horses galloping speeds, which ends up being FAR more realistic to me, and sometimes I still stop to fight if I want to, but I can outrun anything if I want to as well (I also don't fast travel, but just gallop across the country once in a while)
I own two horses, and your own horse will stay put - for a while. If you are gone far away for a long time (a couple or a few days in game I think), then come back, your horse might be gone, and you'll find it back at the stable you bought it from.

Ah, if it stays at the stable that's fine, as long as it doesn't dissapear. Weee.
Maybe my painted horse went back to the stable...I can only hope.
Also, on my way to Bravil, I came across [SPOILER]a unicorn guarded by 3 or 4 minotaurs.They all attacked me (the first time I actually lured just one minotaur away by accident and it was hilarious to see him kick the ass of the bandits down the road). There was a horseshoe icon when I moused over the unicorn, but pressing the use key did nothing. Is there a way to ride it/tame it/have it not try to kill me? Is this part of some quest?[/SPOILER]

[SPOILER]The unicorn is part of a quest - however, the quest is to kill the thing. If you've got a male character, the unicorn is a generally unpleasant beast. While you can ride it if you sneak up to it, it attacks you the moment you dismount. You and anyone else nearby. I'm told a female character gets a much nicer reaction, but haven't tested that myself.[/SPOILER]
