I haven't touched morrowind for a while, and I just managed to get rid of a Greater Bonewalker in the Favel Ancestral Tomb - the only thing is I can't move as my strength and endurance have gone to zero - over encumbered. I know I must have picked up an effect, but I have no idea how to get rid of it.

This is why you should always restore strength potions on you. Even if you remove everything off you, you still can't move.
Someone can give you the console command to cast a restore spell or something, I don't have my CS anymore. But if you want to you can look up the restore health potion ID and type Player->additem ItemID 1
If you are on xbox then you need to load

You should do what I do and carry around Restore Strength potions, Almsivi & Divine Intervention amulets, and Constant Effect enchantments which boost your strength to 169 ;)
I'm actually having some trouble with (what appears to be) a drained skill... my Destruction rating appears in Red, although I can't actually remember it actually occurring. Did someone drain my skill? And how do I get it back - restoring attributes is dead easy with a potion or blessing, but how do I go about restoring my skills?

Well, that's it you see, I had forgotten just about everything, and looking at the piles of junk in my inventory just made me give up.
To be honest, from a game point of view, this situation is a pain in the arse - it doesn't make sense that you can't even rest to regain strength, plus I don't want to have to walk all the way to the nearest place to get potions - I must find out the console command, or use that item thing.

I recall there's someone in mournhold who teaches the "fortify skill" spell, maybe she offers "restore skill" too?

I know there is a restore skill spell, don't think so in game but if someone with the editor wants to look it up....
