It's against the rules to use both hands or to change from one hand to the other. This applies to fencing, of course.

Even if it was allowed, I can't begin to see how it would be an advantage to use both hands. It's not like you have to beat the other guy into submission.
And changing hands, with the wiring? I don't think it's gonna happen.
