I'm trying to get my Telvanni stronghold built and am having trouble finding powerful daedra to kill for the soul gems I need to provide. Do I really need either Winged Twilights or Golden Saints? Or will a Storm Atronarch be enough? I've already trapped one of the latter and have not seen a single one of either of the first two. Any ideas where I might get some?

There's definitely a couple of Winged Twilights at the bottom of the Berandas Stronghold, just south of Gnisis (this is part of an Imperial Cult quest, so if you're a member you'll be sent there eventually). And maybe a Golden Saint but this might be random (I had to reload in the stronghold and first time I faced a Golden Saint and after the reload a Flame Antronach, though I also found a Golden Saint wandering around the corner from this particular encounter). Golden Saints and Winged Twilights start appearing in the wilderness and around Daedric Shrines after you reach a certain level. Your best bet is to find a Summon Golden Saint scroll and use it.

I gathered Storm Atronarchs from the abandoned ebony mine south of Balmora... All types of atronarchs spawn there...

IIRC, both Winged Twilights and Golden Saints prefer the harsh, rocky landscapes along the northern coast of Vvardenfell, as well as the islands to the north. Pretty much the Sheogorad region, though I think I have also found some Golden Saints in the Grazelands.
Winged Twilights are pretty much outdoor creatures. Golden Saints appear deep within Daedric Ruins every now and then. Be sure to explore any Daedric Ruin you see, fully.

I think it's easiest to find Golden Saints (which are also useful for constant effect enchantments and they have valuable stuff to loot off their corpses) in Daedric ruins. In the open countryside I think the northeastern grasslands around Vos seem to have a higher chance of finding one. All of this is assuming you are of high enough level for a GS to spawn. The absolute easiest way to find any Daedra to soultrap is to summon one and then kill it... if you're a Telvanni Mage, it's shouldn't be too hard to acquire the necessary summoning spells. ;)

Golden saints (generally) appear at level 16 in daedric ruins and 20 (or 18) in Molag Amur. Storm atronachs and winged twilights appear both at level 15 in daedric shrines and level 18 in the wilderness.
