Maybe the casino and stim units were intended for proper use (i.e. with families and space tourists) once the bugs in the FTL drive were fixed and FTL became more widespread?

Because peanuts aren't nuts but legumes.
The sign is a warning for people who are allergic to nuts that may have crept in during the production or packaging process. And it rids the company of costly lawsuits should someone die from an allergic reaction.
What did you want to prove though by this snappy remark?
That the developers put these signs there without any reason at all? (Or because they were nuts? Aahaha...um.) Anyway that's possible of course.
But it's just an assumption.
And even it was true and neither Levine nor anyone else ever had in mind to have children onboard the Von Braun, that'd be no reason not to do it now.
Ah, what the heck, it's just an idea that I thought was pretty good. But it won't get realised anyway.
So I'll just wait for Bioshock instead.

I thought it was obvious. Quite often warning signs are placed not due to logic, but due to silly legal requirements.

Well, the Von Braun was originally supposed to be a cruise vessel or something like that and the reason it was chosen for the FTL drive is because of the fact that it was the only ship large enough to hold the drive that wasnt in use. So if it was supposed to be Titanic in Space, then of course there would be signs like that for liability reasons.
