1.
Terrorist says
I think the law's on us.
2.
Paul says to JC
I'll see how it looks onshore.
3.
six ways to Sunday
(Got a shipment of that experimental fuel, but this is scary stuff -- toxic six ways to Sunday, and while the emergency purge is designed to shunt it into the basement tanks in case of a problem, the fumes alone could creep back up the ventilation system and put most of the facility out of business. Definitely lowest bid contractor work.)

1. By "The Law" he means police or law enforcers. So he's saying something like, "I think the police have found us".
2. He's telling JC he will see how the situation is onshore.
3. He's just saying it's very toxic stuff :) Maybe there's some story behind that expression "six ways to Sunday" but I don't know it.

WRT Quote 2:
IIRC, that was actually spoken by JC when Paul told him about the NSF informan (Harley Filben) with the front door key but added that perhaps searching for a back way in could be a better idea.
Basic, it means JC will decide for himself after checking out the situation on the Liberty Island itself (they were at the Docks, and thus in a sense "offshore")

Maybe it comes from the fact that there are 6 other days in the week, so no matter which way you look at something, by the time sunday rolls around, it's still the same way, solidifying that adjective to the situation. Nevermind me, just idle rambling from my corner of the world.
But yes, if something is a certain adjective six ways to sunday, it exemplifies that adjective.

"Six ways to Sunday" sounds to me like something related with the fact quite a lot of people begin their work on Monday and immediately start thinking about the weekend to follow, displaying that attitude through how accurately and efficiently they work. Then again, I might be wrong.
