You can use things like Vorpx to get Thief displaying on the Oculus. It is ... not great. It's also not actually in 3D. That video from 3-4 years ago is the same. It's displayed in 2D on the oculus.

Custom maps for Doom, Quake, and Thief are literally all I play these days, so if Thief didn't exist I'd have one less game to play. Or two, technically.
