Henke - You can definitely find a 5.1 bundle with speakers and a low end AVR for a few hundred Euro. I'm not sure I can help with suggestions as I haven't really listened to the offerings.
I personally care more about music than home theater, so my preference is to stick with 2-channel stereo unless you have a large budget. I have a 7.2 system in my living room because my wife is a big movie watcher, but I'd rather listen to the stereo system I set up in a basement room. If I were in your shoes, I'd buy a pair of Elac Debut B6 speakers (USD $280) and add a used stereo receiver for a couple hundred. But that's just me. For movies and gaming, 5.1 will be more immersive.

These cheap (
https://uk.creative.com/p/archived-products/sbs-a250) Creative PC speakers do well enough for me. I have got a better Yamaha sub that I use for music, but it's no good having fancy speakers without acoustic treatment in your room. I still want to try using foam and fibreglass bass traps when I can get the time to pull the supplies together - this has just reminded me...

I finally bought a projector!

Good price, works well. Only drawbacks as far as I can see is that it's only FullHD, and a tad noisy. 1920x1080 is fine at the moment, but I feel like it might get outdated when the next console generation rolls around. And it's a bit noisy, but you really only notice that before you've started playing any game/movie, after that the audio drowns out the hum of the projector.

For the soundsystem I dragged an old Fintec 5.1 system down from the attic. I didn't have a good way to control the sound on it earlier, which is why I wasn't using it, but now I got it hooked up to the projector, so I can control it via the projector remote.
So yeah. Good upgrade for a decent price. :)

I'm glad to report that the projector works just fine in the daytime, even now in the brightest days of summer. :)
I still have the TV, it's in the lower left hand corner in the above shot. Not sure what I'm gonna do with it.
