ok wtf it's been a long ass time since I read the book but I don't remember the ending being doo de doo here are some bad wizards taking a lovely evening stroll through hogwarts and no one will notice except dumbledore who they happen to kill and harry who happens to run after them shouting a bit and snape going oh ps the halfblood prince is me pretty cool huh bye!

No indeed. The book ended with a massive battle including some savage werewolf attacks and a rather large chase/faceoff between Snape and Harry. Basically that film cut out all the most exciting bits of the book, for no apparent reason, and yet still dragged the length out to 2 and a half hours with a lot of filler including filler that wasn't even in the book. It defies all logic.

It was to avoid repetition with the end of the 7th film which also culminates in a large battle inside Hogwarts and is ultimately much more important than the one that appears in the sixth book.
The funeral was removed as it was believed it didn't fit with the tone of the film and that Dumbledore's death would ultimately have more impact without it.
The encounter between Snape and Harry would have been much better had it been more like the book, but Harry doesn't know that Snape revealed the prophecy to Volemort so maybe he's not as angry or something.
