When does it come out on PC? Because I feel I have to make some excuse to not play it until I hand in my thesis and a staggered release date may feel less artificial.

Same here. I've probably bought less than 5 games at full retail in the past 2-3 years (Skyrim, DXHR, Bioshock Infinite come to mind...), but I'm going out at lunch today to pick up my copy. It's one of the those games that there's so much game to play, it's worth the price even for a cheapass mofo like me.
Although - I heard Amazon (!) was out of stock - I'm still assuming/hoping I'll be able to simply walk into a Best Buy or Gamestop and pick up a copy.

It hasn't been announced yet but it will come out eventually and I can only advise you to wait for it. I've been playing the game for almost two days now, so I can confidently tell the following:
* GTA V is a very good GTA game;
* I've felt frustration at the game being so low-res and heavy on the hardware more times than for any other current-gen console game. GTA V has the potential to be absolutely gorgeous and falls short because of the technical limitations of the console platforms (low framerate, 720p max, low-res shadow maps, blurry textures, awful aliasing, fog, very aggressive LOD management, pop-in).
Nothing deserves more pixels, less jagged edges and textures that don't pop out of nowhere more than this game, it will be glorious on PC.

GTA games are boring, none of them have interesting stories nor good scripts nor likeable characters. Gameplay is snooze and mechanics are mediocre. I rate all GTA games with 4 out of 10.
