First of all, I'm not guaranteeing you'll like these mods, but I'm suggesting them after having played them and enjoying them. Some may not actually have any effect on gameplay, but just make the game look nicer. If you have any mods that you found really fun... post a link and a description here, for all of the forum to enjoy, ;).

Stargate mod
This mod is not close to finished, but it is still really good. It creates 3 new missions which start in balmora. You will even be asked to go on a mission through the stargate. More missions are soon to come.
Seeker's mod
This mod creates a new faction with it's own set of tasks. The seekers are information gatherers, and you can help them. You can join the faction in Caldera, there should be a new house behind shenk's shovel and the mage's guild.
Eldar Plugin mod
This mod adds alot of kewl things to the game. You can now cut wood from trees and use them to make things, from arrows, to working fishing poles, to traps you can set. You can find a free woodcutters axe and a carpenter's knife on the small island south of balmora(has 2 bridges connected to it). The mod also adds a controllable gondola. The gondola is located by Vivec's Hlaalu canton.
Modern man's Hunger Mod
This mod adds alot of realism to the game... it makes it so you have to eat once a day. If you don't, then you will slowly suffer from lower attributes and fatigue, and if you continue to starve yourself, you can die. But food is really easy to find, bread, kwama eggs, various types of meat, etc.(the readme shows which things are food, and how many are considered a meal). Your character will automatically eat food if it's in your inventory.
Real Signposts
This mod is pretty simple, it just changes all the signposts to readable ones.. now you don't have to be close to see where the signs are actually pointing to.
Balmora Museum of Ancient history
This mod adds a new building in balmora, a museum. It was layed out very nicely, and could be considered a thieves paradise, with ebony, daedric, and dwemer exhibits. But you have to watch out for the guards, they can be pretty mean.
The Modern Adventurer vol. 1
This mod adds a sort of newspaper to the game. The articles are pretty funny, and some of them are helpful. Currently, only the first edition is out, and you can find it in seyda neen's tradehouse, balmora's bookseller, and a few other locations.

Castlevania
This is a really big mod for those higher level adventurers. Apparently dracula has found his way to morrowind, and the last of the Belmont line doesn't seem fit to fight him. It's up to you to make your way to his castle and slay him as well as the other beasts that live there. The creatures there can be extremely difficult and numerous.
I'll add more mods later, there are alot of other good ones I haven't included, cause I'm tired of typing right now, so I'll add more tommorow or something. :p

The Modern Adventurer is the best plug-in of the lot ;D Not that I'm biased or anything!

GT's (a dev from Bethesda) latest is sure to please. Personally I think it's fantastic that someone who has every right to wash their hands of a job well done supports their product, even in an unofficial capacity. Oh, and did I mention Dragons... (

Here are 4 mods, which are all great :). The pretty faces project adds 4 female faces which are definately nice alternatives to the Bethseda ones. The duel wield mod adds some parrying weapons to go into your shield slot. Wizzards can now wear those funny looking pointy hats :p. And another new weapon is added, a silver war scythe.

This site has lots of weapons like the alastar, zelda's master sword, and the brotherhood sword. The weapons look really kewl, and there are still more comming too.

The MW Adventurer is a great idea! Stuff like this is why I like MW over NWN and DS...that the plugins fit into the game you're already playing.

A weapon they should've had but overlooked - give me some of those spikey balls on the end of a chain attached to a short stick thingy. What is that called? A Mace? I want 'em one-handed & two-handed, light, med & hvy. That's a toy I could enjoy.

A morning star (a mace is almost the same, just without the chain ;)) I can only surmise what a headache coding a physics set (not to mention the required animation) for such an implement would be though...

Why can't they release a mod with the dragons?
Damnit!!! More dragons! I recognized a singular I believe. ToV has lots of dragons!
Edit: Because you're all inferior, here's a dragon that Afterlife finally got to give up his chain AE DTing drake ring...

This mod changes alot of the sounds like rain, weapon swinging, walking, etc. IMO, they are alot better than the original, the file is pretty big, just to warn those with a slower connection.

This mod has been out for a while, but is really good. If you havn't gotten this one yet... you have to download it. Adds alot of things, new creatures, npc's, a giant floating fortress that you can eventually use to travel to various places, a large daedric fortress which is very challenging to get through, and alot more.
