Most of my extensions reflect the fact that I am a web developer.
NoScript, which ShadowCat mentioned.
Permit Cookies - Only allow cookies for sites you allow, via Alt+C.
Web Developer Toolbar - This is fantastic, so many web developer options, validations, and even editing CSS & HTML on the fly.
wmlBrowser - I do quite a lot of stuff using WAP and Mobile XHTML and this allows me to view WML in the browser.
IE Tab - Use the IE rendering engine at the click of a button, or force sites to always load the IE rendering engine. Helpful for sites that are IE only, as well as things like being logged into the forums as a user and an admin at the same time for testing.
Greasemonkey - Only using a couple of scripts at the moment. Remove the Adsense stuff from Google's own pages. Link GIS images straight to the image, bypassing the in situ stage and provide a download link to the videos on Google Video.
Live HTTP Headers - See exactly what headers are being generated on the fly.
ImageShack Right Click - Upload images to image shack.
Tab Mix Plus - I used to use Tabbrowser Preferences, but this is better.
AdBlock Plus - byebye ads!
AdBlock Plus Filterset G - Extension that checks for updates to the Adblock filterset.
Stylish - GUI to per-site CSS stylesheets.

Cookie Button in the status bar - worked better for me in general than Permit Cookies, due to the fact that I can access eBay and Yahoo etc with it.

FormFox - Lets you know where your submitted form is going when you hover over the submit button

Sage - Very good RSS client
Tabbrowser Preferences - Almost redundant due to Tab Mix Plus and others, but still has a bunch of options unavailable elsewhere.
Nightly Tester Tools - for extensions thats won'ts installs when you wants thems to.
