I've actually done some snooping around the Internet and found out a little about the enemies appearing in Deus Ex 2. These enemies are...
Just kidding. I don't wanna spoil anything.
But they are bringing back most of the enemies in the first.
I think that in Deus Ex 2, they should have cyber-enhanced sharks. You know, armor, laser sight, the works. Hammerheads would look the coolest that way.

All I ask is for some freakin, sharks with feakin laser beams on their heads. Is that so much to ask? Throw me a freakin, bone here...

Hey! I know my film references....
By the way -
a) nice Austin Powers reference, and
b) The PC Gamer preview of Deus Ex (which, by the by, contained virtually no information on how violence has been improved for the sequel <rant, rave, complain>) says you have piranha which only attack you if you are bleeding. So they already have water enemies, in a way.
That's a bit crap, IMO, because once you get past the initial "Oh! They only attack bleeding things!" (which would take about 5 seconds) you just press F10 (regeneration) and heal Alex completely before he goes into water. No sweat. Talk about easy to get around....

Yeah, I heard about those pirhanas in Deus Ex 2.
They're called ceolocanths. They are actually prehistoric fish that were discovered to still exist a couple years ago. The ones in DE2 have razorsharp teeth while the real ones don't. They still look pretty similar though.
And I thought about that Austin Powers quote after my post. Good call.

Don't forget a monkey that can lay explosives behind you!

The *original* DooM had three episodes. Thy Flesh Consumed was added in the Ultimate Doom version. :D
As for new monsters, i have always liked the idea of a creature/robot that can only sense movement. It could be used as a form of sentry, but in order to make it unique (and not like a camera/sentry gun setup), it might only have melee weaponry (or claws). It would make for some funny situations whereby you're trying to inch yourself towards a safe cubbyhole somewhere while this thing is slowly homing in on you each time you take a step forward. :ebil:
At any rate, i would like to see creatures that make use of specialised and very unique AI and creature abilities/flaws ... instead of the patrol/attack/run-away-when-injured routine. It sounds as though they're already implementing this with the LAM Baboon and the fact that Karkians can't see in the dark, i just hope it works as well as it sounds. :)

To be perfectly frank, I'm not particulary scared of a LAM lobbing monkey, regardless of whether it's behind me or not. Unless its bulletproof, that is........now THAT would be scary. Anyway, how come it always stays behind you?

The actual creature is a monkey that follows you and sets LAM's behind you in case you try to retreat or backtrack. It does sound a little far-fetched, though.

How'd it get the LAMs?
