You can play marines or predators against waves of aliens. But it's not something I'd label as mentally challenging, so I doubt it's something nicked's gf would be interested in. The TT Lego games would very likely be a lot more interesting to her, especially if it's from a franchise she enjoys.

This being TTLG, probably worth pointing out you can actually play a lot of the 1000 some-odd Thief 2 FMs we have (
www.ttlg.com/forums/showthread.php?t=124169) coop with a little set up (but not all of them). It's every bit as fun as you would imagine it would be. I'm guessing you already know about it though.
Edit: That thread says it's still beta. Depending on the FM you play, some things are a bit buggy like elevators, and the animations are pretty simple. But aside from a few things like that, they already play great.

MOrrowind just got a coop mp mod with all the npcs and quests active, so you can team up with your khajit friend and play through the main storyline. I have tried it and its actually pretty cool.
