While I like
Okami a lot, I never found it particularly chill, since there is so much combat - though perhaps the battles and especially the drawing aspect are easier if you're playing with KBAM. With a Wiimote or gamepad I found those quite fiddly.
Yeah, I played it with KBAM and didn't find the combat particularly taxing. Also, you can get an item that lets you just run past the monsters and they won't follow you, so I didn't do much of it outside of fang farming and those headhunting quests. Though, I didn't find it that much worse with a gamepad either, so maybe it was mostly just me running past the monsters?

I came into this thread to recommend A Short Hike, and I'm happy to see two people already mentioned it!

Same. I scrolled down to see if anyone has mentioned A Short Hike, and it has been mentioned four times now. I think it's the ultimate chill out game. :D

In RollerCoaster Tycoon 3 if you go into Sandbox mode the only "objective" is to build a park with unlimited funds.
Casual themeparks and city builders like Megaquarium and Aven Colony can also be fairly stress free on lower difficulties. At least once you learn the mechanics.
