A useful tip for anyone who knows the release years of their games as badly as I do: if you have GOG 2.0, you can sort your whole games collection by the release year of each game. :)

I did that to make my list. :)
A few things seem to be sorted out-of-order there though.

This is a tough one. There's been a tonne of amazing games this decade -- I'm sure I'll come back and edit this list in a few days but, for now, the following games stand out in my mind as the games of the decade (or my favourite ones at the very least). Apart from Dark Souls, which sits at the top of the list, these are in no particular order.
Dark Souls 1, 2 & 3 - I struggle to pick a clear favourite out of this series. After spending countless hours replaying through the entire series on the PC, I succumbed to buying all three games on the PS4 Pro at some stage last year and have almost finished an end-to-end playthrough of each of them (albeit not in order: DS3, DS1 and am now over halfway through DS2). A life-changing series ;)
Bloodborne - A very close second. I didn't really appreciate this as much until my second playthrough (not NG+).
Soma - One of the most thought-provoking and, at times, terrifying games ever made.
Inside - This somehow managed to top Limbo, their previous effort.
The Last Of Us
Telltales Walking Dead
Mass Effect 2
Far Cry 3
Deus Ex: HR & MD
Fallout: New Vegas

This does make me realise I've still failed to play many of the great games of the decade, some of which I have actually owned for years.
Games which I have played enough of to mention:
Skyrim, Portal 2, Doom and Horizon Zero Dawn.

Yeah... I just went through the thread and counted 4 games I've played, and a further 13 that are in my collection but which I have never played. I'm not surprised, really -- I haven't done very much gaming in the past decade -- but it does makes me curious about what I'm missing.
