And playing a character who is like yourself but in different circumstances is still acting. Just ask any actor or director, dingbat.
For that matter, playing yourself can be acting as well. Many people can't handle it. That is why, even when not that much time has passed and the person still looks the same, almost no one plays themselves in a "based on a true story," movie. It is acting, and the central characters of such movies are rarely actors, thus they are not qualified to play themselves.
In fact, in the definition you cited it takes it a step further and says that many people are role playing simply by acting the way they do in their daily lives.

role playing(also
role play)
* noun the acting out of a particular role, either consciously (as a technique in psychotherapy or training) or unconsciously (in accordance with the perceived expectations of society).
Which means that acting out a role unconsciously because you think that is what society wants you to do, which the vast majority of human beings do in their everyday lives to some degree, is role playing.
Again,
according to your own chosen source people acting the way they normally act is role playing.

I notice that gaming isn't even mentioned (presumably it falls in with psychotherapy and training.)

I mean, I see your point, but I'm much happier with "it's roleplay, but frowned upon coz it's shitty roleplay" rather than "it's not roleplay".
Of course, I completely disagree with the "shitty" qualification you used. When I played AD&D, half of the time I was a player (playing as myself), the other half I was the DM, meaning I was imitating other "personalities" (although I always kind of have one character who was me somewhere in the story). I certainly don't think playing as myself was "shittier" role playing than imitating 15 different characters. Maybe you value only imitation and not introspection, but personally I value a lot more introspection than imitation.
And anyway, playing as myself was a lot more rewarding than simply imitating an external model. So even if their was a (self-proclaimed) authority saying introspection style was "shitty", I simply wouldn't give a shit.
