He wasn't saying it was the word "essence". He was saying readers of the era understood the word "rib" to mean "essence". In our era we use "heart" to mean the same thing; when you give someone your heart it's not a bloody affair. I don't know myself what they meant by the word, but I know that reciting the literal word back to him doesn't entirely answer the issue.
You'd have a better argument if you were saying something about how readers of the era understood what was really going on in that passage instead of what a modern dictionary says.

Christ, I'm not sure how much of that introduction I can read....the selective quoting and..downright fucking WRONGNESS is painful. So so painful.
They also seem to think (admittedly via horrendously mangled analogy) that evolution claims huge lengths of DNA arose in large numbers before 'learning' to reproduce, which is about as backwards as it's possible to get (and misses the entire RNA world, but hey: let's not confuse em further, right?).
Also, what the hell do they think 'transitional forms' are??!?! ALL SPECIES
are transitional forms, ffs. There seems to be some idea that evolution states you have 'stable monkeyform' that then hops into 'mutable transition form' for an instant and then produces 'stable humanform'..or something. Christ, I can't tell if it's misinformation, ignorance or just retardedness.
