Well, yes. UW2 did the same thing to implement bridges although I can't remember any areas where they used them to divide a room into two sections (I'll have to have another play-though to check ;)).
I honestly don't remember Hexen having similar structures you could walk on although it's been years since I played it. I was very impressed with Duke3d at the time for allowing areas to overlap and it did a brilliant job of creating a believable mental map of a 3d world.
Anyway, regardless of the map representation or rendering system used, if it were just down to the graphics alone, SS1 wouldn't stand up as a game today. The fact that it still does is a testament to the whole game and not just one particular facet of it.

They popped up here and there; the bridges were represented by three sparkly bits in a triangular shape spinning slowly in the air. But looking at them you aren't immediately convinced you that you won't fall to your death if you gave them a try.

Remember those steps made of little rotating blue stars, like the ones that make the stairway to get across the chasm at the end of seven portals?

True, but then any game made more than five years ago wouldn't stand up as a game today if it were just down to the graphics alone.

That does ring a bell, now you've mentioned it. It was a nice effect as I remember it, but not integral to the gameplay.

Absolutely, but you have to remember we're talking about a game that was released almost
14 years ago (ok, I'm 2 weeks short). I would love to find other games from that time period which are as immersive, compelling and well written.

I think what he said comes down to: Graphics technology evolves. No doubt you could remake any of those good looking 5yo games today and give it an extra edge here and there. Or take away an edge for that matter. Anyway, it hardly makes him a graphics whore.
But I'm actually more interested which games you refer to.
