In the OP I listed my hopes. They are no different than what you feel for any game you are excited about - based on previews, description, screenshots etc. we all develop expectations. The only difference is, this being a remake, there is an extra, arguably biggest element to base your expectations on besides "previews, description, screenshots etc." - the original game. Yes, I can still go back and play original FF7 and a remake wont take away from that. But if the remake sucks (in my opinion), it means one less game to be excited about this year.
I don't actually want them to remake the game 1:1 with improved art and music, what a waste that would be! But I do want it to espouse some of the core values of the original. Why? Because it's a remake, not a spinoff, which implies that is what they will be doing.
A lot of the core values are subjective and up for debate, but I feel some are intrinsic to the game. What if they did away with Materia? Or Midgar? Those are not only iconic elements of the game, but also functioned really well. Getting rid of one or two may be fine, but if you chip away enough elements it slowly becomes a stretch to call it a remake.
TL;DR I want a remake to espouse what I liked in FF7 because I want to enjoy those elements again in an improved form and additional content, but I wont be frothing at the mouth if it doesn't deliver. Just walk away disappointed as one would with any game they end up disliking.

Wasn't aimed at you Koob - it's a boilerplate opinion of mine which has grown over the years of seeing people outraged at any revisit to a beloved IP, as if the process were somehow destructive and/or the fans are the proprietors of the IP. I just don't get it. To address your points anyway though:

Wasn't it already released in a state you were happy with back in 1997? Regarding the remake, I totally get wanting it to be something good, but that's not what irks me - what irks me is that some people seem to want, as was mentioned earlier, just a spruced up copy of the original. If Squeenix want to make some changes - then why not? It's their IP, so their call. People may end up liking the changes, or they may end up hating it, or it'll be a mix and those who hate it will shout at those who love it an vice versa, each thinking they and only they are in the right. The fact remains though that no one is touching the original, so the fans who hate the new one have lost nothing and the fans who like have gained something. Zero + something = net gain.
As for the rest, I don't begrudge people being disappointed with things they had hopes for taking a turn for the worse (hello Bioshock), but a remake of a game/film/song which people already love is a special case. If the original is great, then play that. If the remake is even good, but not as good as the original, then that's ok too. But I'll never get the "Oh my god, they ruined my favourite game/film/song" when the original exists unscathed. Again, this isn't aimed at you, it's cumulative observations on the "NO WAY ANOTHER REMAKE RUINED MY FAVOURITE X" phenomenon.
Some re-makes shake the whole formula up and end up being fantastic (XCOM yo), so I wouldn't give up hope on it just yet - how things sound on paper or look in early preview vids may not represent the actual experience of playing it. I'm sure Squeenix don't want to shit on the game for cash, since they're probably going to be pitching to older gamers with this. The only other possibility is that FF7 has such legendary status, that they want to make it accessible to the younger gamers, in which case, complaints from fans of the original seem more that they're catering to their fans, but the
wrong ones. Which is just odd, since again, the original is re-playable any time.
At the end of the day - why do these re-makes get made? Because people buy them. Why do the hardcore fans sometimes get neglected as the targeted audience over the mainstream ones? Because there are fewer of them.

What I really want is a Deadly Premonition remake with the option to skip the combat sections and just cut to the end scene of each said combat section.

Just started playing this last night and am enjoying it so far. The only thing I really haven't cared for so far are the random side quests which just seem like filler and the obvious slow walk through a corridor or elevator to hide the occasional loading time. The real time combat is pretty decent though and there's a lot more depth and strategy to the combat than I remember there being in the original game. I also like how the boss fights have a lot going on with them now and consist of multiple phases. I would also recommend going into the settings and maxing out the camera distance as the default setting is a little too close for my liking.

I like it too, but I thought they were going to really expand Midgar. Instead it's mostly very linear, just like in the original.
The story is great, I like most of the changes and additions except for the friggin ghosts ruining every scene their in and being pulled straight out of Nomura's or Nojima's arse.
I'm at chapter 9 and it's the best one so far.

This is in the latest PS+ so I'm playing it now. I'm about 12 hours in, Aerith is helping me get to Sector 7. I never played the original, not a fan of the combat in the old FFs so the only one I've played the whole way through is FFXV. Anyway, I'm kinda loving it. The characters and story are pretty goofy but lovable and the gameplay is fun. And I'm kinda surprised to be enjoying this game's very linear progression more than FFXV's open world.
How exactly does enemy scaling work in this? Do they scale with your weapon upgrades? Kinda seems like it since I actually forgot to upgrade my weapons for most of the game, then once I did the next 2 bossfights (Toad King and Rude) were way more difficult than any previous fights.

I'm in the haunted trainyard aaaaaaand I dunno, I think I'm done with this. My last few sessions with the game have been a real slog, feels like the momentum has gone out of the narrative, and the bossfight against this charriot-thingy is frustrating. Does the game pick up again after this? Cause I don't think I wanna do this anymore. :|

Oh shame to hear that, I've just gotten into the beginning but haven't got as far as you. I'm enjoying it so far, it is goofy but that's part of its charm I guess.
