Makes you wonder why in Mexico when people dies everyone starts a big party and start eating like there is no tomorrow and everyone is invited and somewhere else they are all sad and serious about the departure of a beloved one, do they hate them or is it party time at any cost?

Neither.
First time I've heard of that o_O
I'm sure there are funerals where they actually turn into parties and such, but you must be confusing us with another country. We usually have a typical funeral with sadness and sorrow, or just people going "muuuuh...", but not partying. Again, exceptions apply, maybe even a region/city/ethnic group, dunno, but as a whole...news to me.
Mind you, most mexicans (youths specially) do love to party at any cost :D
